Wimpy's Hamburger Relish

Why buy it when you can make it! Very flavorful with a hint of heat.

Ingredients

    Day One - Step One

    • 2 sticks Cinnamon 3 inch sticks broken into pieces
    • 2 teaspoons Cloves whole
    • 2 teaspoons Allspice whole
    • 4 cups Apple Cider Vinegar
    • 4 cups Tomatoes peeled, seeded and chopped
    • 2 cups Sugar
    • 4 teaspoons Mustard Seed
    • 1/4 teaspoon Cayenne Pepper
    • 1 teaspoon Smoked Paprika

    Day One - Step Two

    • 4 cups Cucumber unwaxed unpeeled, finely chopped
    • 3 larges Jalepeño Peppers Chopped with seeds
    • 1 1/2 cups Red Bell Peppers finely chopped
    • 1 1/2 cups Green Bell Peppers finely chopped
    • 1 cup Celery finely chopped
    • 1 cup Onion finely chopped
    • 1 1/2 teaspoons Tumeric
    • 1/2 cup Pickling Salt
    • 8 cups Water
    Directions
    DAY ONE
    1. Tie cinnamon, cloves and allspice loosely in a cheesecloth bag.
    2. Add to vinegar in a heavy bottomed non-aluminum saucepan and bring to a boil.
    3. Simmer uncovered 15 minutes.
    4. Add tomatoes and bring back to a boil.
    5. Simmer partly covered <b>30</b> minutes.
    6. Add sugar, mustard seed, cayenne and paprika
    7. Pour into a bowl, cool, cover, let stand overnight at room temperature.
    8. Combine cucumbers make certain they are the unwaxed type, peppers, celery and onion in a bowl.
    9. Sprinkle with tumeric and salt then add water. Stir, cover and let stand overnight at room temperature.
    DAY TWO
    1. Drain liguid from salted vegetables and replace with enough cold water to cover.
    2. Let stand 1 hour pressing down lightly a plate with a bowl filled with water on it works well then drain veggies and discard water.
    3. Bring Tomato mixture to a boil, add vegetables and bring to a full boil, stir often.
    4. Cook uncoverd on high for 30 minutes - stir frequently.
    5. Remove spice bag and squeeze all possible liquid from it into the relish.
    6. Bottle and process for 10 minutes in a boiling water bath.
