Apple and Red Chile Chutney

Serves:

Ingredients:

4 large Granny Smith Apples -peel,core,coarse chop
4 fresh Red Chilies
1/2 cup Brown Sugar
1/3 cup Apple Cider Vinegar
8 cloves Garlic - minced
1 cup Water
1 tbsp Fresh Marjoram - chopped
1/2 cup toasted Pine Nuts

Method:

Place apples and chilies in a heavy bottomed saucepan (Stainless Steel or Ceramic preferably) along with sugar, vinegar, garlic and water. Bring to a boil over medium heat then lower temperature, partially cover and let simmer, stirring occasionaly, for 30 minutes. Stir in marjoram and pinenuts. Process 15 minutes in a hot water bath
