| 4 large Granny Smith Apples -peel,core,coarse chop | |
| 4 fresh Red Chilies | |
| 1/2 cup Brown Sugar | |
| 1/3 cup Apple Cider Vinegar | |
| 8 cloves Garlic - minced | |
| 1 cup Water | |
| 1 tbsp Fresh Marjoram - chopped | |
| 1/2 cup toasted Pine Nuts |
Place apples and chilies in a heavy bottomed saucepan (Stainless Steel or Ceramic preferably) along with sugar, vinegar, garlic and water. Bring to a boil over medium heat then lower temperature, partially cover and let simmer, stirring occasionaly, for 30 minutes. Stir in marjoram and pinenuts. Process 15 minutes in a hot water bath
