| 9 Cups coarse chopped Green tomatos - about 3 lbs | |
| 6 Cups coarse chopped, peeled and cored Green Apples - about 3 lbs | |
| 4 1/2 Cups Coarse chopped Onions - about 1 1/2 lbs | |
| 2 Cups diced Celery - no leaves - about 1/2 lb | |
| 3/4 Cup seedless Raisins | |
| 1/2 cup candied or preserved Ginger (4 oz) in 1/4 inch dice | |
| 2 Cups dark brown (demerara) Sugar (not the crystal form) | |
| 1 1/2 cup Malt Vinegar | |
| 1 Tbsp Salt |
Put all ingredients in a heavy bottom (non aluminum) pot and cook until thick. Process 10 minutes in a hot water bath.
