Green Tomato Chutney

Serves:

4 pints

Ingredients:

9 Cups coarse chopped Green tomatos - about 3 lbs
6 Cups coarse chopped, peeled and cored Green Apples - about 3 lbs
4 1/2 Cups Coarse chopped Onions - about 1 1/2 lbs
2 Cups diced Celery - no leaves - about 1/2 lb
3/4 Cup seedless Raisins
1/2 cup candied or preserved Ginger (4 oz) in 1/4 inch dice
2 Cups dark brown (demerara) Sugar (not the crystal form)
1 1/2 cup Malt Vinegar
1 Tbsp Salt

Method:

Put all ingredients in a heavy bottom (non aluminum) pot and cook until thick. Process 10 minutes in a hot water bath.
