A great substitute for store bought mincemeat. Makes Excellent tarts!
| 1 qt Green Tomatoes - chopped | |
| 3 qts Apples (12 - 18) peeled and cored and chopped | |
| 1 lb Raisins | |
| 6 Cups Dark Brown sugar (demerara - not the crystal kind) | |
| 2 tsp salt | |
| 2 tsp Ground Cloves | |
| 1 lb Currants | |
| 3 Tbsp Cinnamon | |
| 2 Tsp Ground Allspice | |
| 1/2 Cup White Vinegar |
Puree tomatos in a blender. Chop apples small. Mix all ingredients and bring to a boil in a heavy bottomed pot. Simmer on low heat until thick (1 to 2 hours). Add brandy or rum to taste, keep mix thick. Process 10 minutes in a hot water bath.
