| 4 cups prepared Red and Green Bell peppers (3 each) | |
| 3 Jalepeno Peppers | |
| 3/4 cup Apple Cider Vinegar | |
| 3/4 cup Sugar | |
| 1 box Certo Light Fruit Pectin crystals |
Seed red and green bell peppers and chop fine (1/4 inch dice). Chop Jalepeno peppers fine, with seeds. Combine peppers with vinegar in a heavy saucepan. Combine pectin with 1/4 cup sugar and add to peppers. Bring to a full boil, add remaining sugar and bring back to a full boil. Boil hard for 1 minute. Mixture will be very thick - stir constantly to prevent burning. Process in a hot water bath 10 minutes.
