Nectarine Orange Salsa

Serves:10

Preperation Time:20 minutes

Ingredients:

1/4 cup Red Onion - Minced
6 medium Nectarines
2 large Oranges
2 Red or Green Jalepenos - seeded and minced
4 tsp Rice Wine Vinegar
1/4 tsp Cayenne Pepper
pinch of Salt
1/4 cup Fresh Basil leaves - finely shredded

Method:

Soak the red onion in ice water while preparing the fruit. Slice the nectarines into wedges and then into small cubes. Cut the ends off the oranges and stand on end. Using a sharp knife slice down from top to bottom to remove the peel and white pith. Cut between the white membranes to remove the orange sections. Drain the red onion and pat dry with paper towels. Combine with nectarines, oranges, peppers, vinegar, cayenne and salt. Refridgerate for at least 1 hour to combine flavours. Just before serving shred the basil leaves (scissors work well) and stir into salsa.
