| 6 cups Bartlett Pears - chopped | |
| 3/4 cup Dark Seedless Raisins | |
| 2 cups Demerara Sugar (not the crystal type) | |
| 3/4 cup Apple Cider Vinegar | |
| 1/2 tsp. Salt | |
| 1 cup Preserved Ginger - chopped | |
| 3/4 tsp. Tabasco Sauce | |
| 2 tsp. Mustard Seed | |
| 2 Small Onions - chopped |
Combine all ingedients in a heavy bottomed pot. Cook until pears are tender and mixture is thick. Process in ahot water bath 15 minutes
