Spicy Apple Marmalade

Serves:6 cups

Yummy!

Ingredients:

1 medium Orange
7 medium Apples - Granny Smith or similar
2 tbsp Lemon Juice
1/4 tsp Ground Nutmeg - fresh ground is best
2 cups Water
3 3" Cinnamon Sticks - broken
1 tsp Whole Cloves
5 cups Sugar

Method:

Wash orange and chop fine - discard seeds. Peel, core and coarse chop apples - you should have 6 cups. Place orange, apples, lemon juice, nutmeg and water in a large heavy bottomed sauce pan. Tie cinnamon sticks and cloves in a cheesecloth bag and add to fruit. Bring to a boil, reduce heat and simmer for 10 minutes, stirring often. remove spices. Add sugar to fruit and bring to a full rolling boil. Boil for about 20 minutes, or until syrup jells on a cold plate or a candy thermometer registers 220F or 105C.

Ladle into hot sterilized jars leaving 1/2" headspace. Process 10 minutes in a hot water bath.
