Method:
Combine thoroughly all dry ingredients. Combine thoroughly all wet ingredients. Add wet ingredients to dry ingredients and beat quickly until all ddry ingredients are incorporated. Do not over beat!
Heat a griddle or heavy frying pan until a drop of water dances across the surface, hold at this temperature. lightly oil the griddle surface and wipe up excess oil with a paper towel. Ladle batter onto griddle (makes 8 good sized pancakes)and cook until bubbly on top and egdes are bubbly and dull. Flip pancakes and cook another minute.
Serve with fresh hard butter and real Maple Syrup (cmon, you've gone to this much trouble don't ruin it with that cheap imitation stuff)
