Dad's Mincemeat
Ingredients:

2 lbs (900 g) Suet |

6 lbs (2.7 kg) Chopped Apple |

4 lbs (1.8 kg) Seedless Raisins |
 |
2 lbs. (900 g) Sultana Raisins |
 |
2 lbs. Mixed Peel, chopped |
 |
3 lbs Brown Sugar |
 |
1 tbsp. Salt |
 |
2 Whole oranges, juiced, seeded and chopped (peel and pulp) |
 |
2 tbsp. Allspice |
 |
2 tbsp. Cinnamon |
 |
8 whole Cloves |
 |
1 tsp. Ginger |
 |
1 tbsp. Lemon Juice |
 |
1 tbsp. Vanilla Extract |
Method:
Mix well and store in air tight containers in refrigerator for up to one week. If storing longer bring to a boil, place in canning jars and process in boiling water bath 10 minutes.
