Y'all are welcome to sit yourself down to a good ol' feed. Pass the grits would ya!
| 2 large yams peeled and sliced thin (4 Cups) | |
| 2 granny smith apples, cored and chopped | |
| 1 medium onion, chopped | |
| 3/4 Cup orange juice, divided (1/2 Cup and 1/4 Cup) | |
| 1/2 Tsp ground cinnamon | |
| 2 Cups diced cooked ham | |
| 1/3 Cup chopped pecans |
In a large skillet combine the yams, apples, onions and 1/2 Cup orange juice. Bring to a boil then reduce heat, cover and steam 8-10 minutes until the yams are almost tender. Remove cover add the remaining 1/4 Cup of orange juice, cinnamon and ham. Mix well and heat for 5 minutes. Sprinkle with the pecans. Serve with Garlic Smashed Potatoes
