A very interesting combination. Try it Mikey, you'll like it!
| 2 Tbsp Blueberry vinegar | |
| 2 Tsp fresh lemon juice | |
| 1 Tsp sugar | |
| 1/4 Tsp salt | |
| Pinch fresh ground black pepper | |
| Pinch fresh grated nutmeg | |
| 1/4 Cup olive oil | |
| 2 Cups torn butter lettuce | |
| 2 Cups torn red leaf lettuce | |
| 1 Tbsp chopped fresh mint | |
| 1/2 Cup blueberries | |
| 4 thin slices brie cheese |
In a small bowl whisk vinegar, salt, sugar, lemon juice, pepper and nutmeg. Slowly add oil, whilw whisking, to make a vinaigrette. Toss the lettuce with the mint and divide amongst four plates. Place a slice of cheese in the center of each salad, sprinkle with blueberries and drizzle with the vinaigrette. Serve immediately.
