Crunchy Quinoa Salad

Serves:6

Ingredients:

1 Cup water
1 Cup quinoa
1/4 Cup chopped green onion
1/2 Cup diced red bell pepper
1?2 Cup diced green bell pepper
3/4 Cup diced celery
1/2 Cup chopped water chestnuts
1/2 Cup slivered toasted almonds
2 Tbsp lemon juice
2 Tbsp soya sauce
1/2 Cup rice vinegar
1/4 Cup water
2 cloves garlic, crushed
1 Tbsp olive oil
Fresh ground black pepper, to taste

Method:

Bring 1 cup of water to the boil then add the quinoa. Cover and turn off the heat. Let steam for 10 minutes - do not remove cover. Drain excess water and allow to cool. Combine remaining dry ingredients and when quinoa is cool add it to them and toss well. Combine wet ingredients in a seperate bowl then add to quinoa mixture and toss well. Serve using a slotted spoon
