1/4 Cup chopped green onion |

1/2 Cup diced red bell pepper |

1/2 Cup slivered toasted almonds |

2 Tbsp lemon juice |

1/2 Cup rice vinegar |

1/4 Cup water |

2 cloves garlic, crushed |

1 Tbsp olive oil |

Fresh ground black pepper, to taste |
Bring 1 cup of water to the boil then add the quinoa. Cover and turn off the heat. Let steam for 10 minutes - do not remove cover. Drain excess water and allow to cool. Combine remaining dry ingredients and when quinoa is cool add it to them and toss well. Combine wet ingredients in a seperate bowl then add to quinoa mixture and toss well. Serve using a slotted spoon
