An ancient grain from South America, Quinoa (pronounced keen-wa) is a very nutritious and flavorful substitute for many other grains.
| 1 3/4 Cups water | |
| 1 Cup quinoa, rinsed | |
| 1/2 Cup fine diced english cucumber | |
| 4 green onions, chopped fine | |
| 1/4 Cup chopped cilantro | |
| 1/3 Cup cooked corn kernels | |
| 3 Tbsp fresh lime juice | |
| 3 Tbsp olive oil | |
| 1 Tbsp sesame oil | |
| 1Tbsp honey | |
| salt and pepper to taste |
Boil water then add quinoa, reduce heat and simmer for 15 minutes or until tender. Stir occasionallythen drain off excess watre and let the quinoa cool. Add remaining ingredients and stir well with a fork.
