Great for a summer BBQ. Lots of citrus flavour and very refreshing on a hot day.
| 1 Tbsp orange zest | |
| 2 Tbsp fresh orange juice | |
| 1/2 Cup mayonnaise | |
| 1 Tbsp chopped fresh basil | |
| salt and pepper to taste | |
| 1 Head butter lettuce | |
| 1 chicken breast - cooked and cut into bite sized pieces | |
| 2 Cups strawberries quartered | |
| 1/4 cup coarse chopped pecans |
Combine zest, juice, mayonaise, fresh basil and, salt and pepper then thoroughly chill. Seperate lettuce leaves then wash and dry them. When ready to serve mound lettuce leaves on salad plates and sprinkle with pecans and chicken pieces. Lay strawberries out around the edge of the plate and serve the dressing on the side.
