An interesting combination of flavours certain to please and refresh late night Java coders
| Fresh strawberries | |
| Butter Lettuce | |
| Arugula | |
| Belgium Endive | |
| Dandelion Leaves | |
| Radicchio | |
| Red Leaf Lettuce | |
| 2 ounces espresso | |
| 1 Tbsp dijon mustard | |
| 2 Tbsp white wine vinegar | |
| juice of 1/2 lemon | |
| 1 minced shallot | |
| 2 Tbsp honey | |
| 1 Cup cold pressed olive oil |
Combine espresso,mustard, shallot, vinegar and lemon juice and blend in a food procesor while SLOWLY adding the olive oil and honey. Chill before use. Wash and spin dry (pat dry if you don't have a salad spinner) a mixture of your greens. Ladle a few spoonfuls of vinaigrette onto a salad plate then lay the greens on top. Cut strawberries into quartes and arrange amongst the leaves.
