Summer Salad with Fresh Strawberries and Espresso Vinaigrette

Serves:4

An interesting combination of flavours certain to please and refresh late night Java coders

Ingredients:

Fresh strawberries
Butter Lettuce
Arugula
Belgium Endive
Dandelion Leaves
Radicchio
Red Leaf Lettuce
2 ounces espresso
1 Tbsp dijon mustard
2 Tbsp white wine vinegar
juice of 1/2 lemon
1 minced shallot
2 Tbsp honey
1 Cup cold pressed olive oil

Method:

Combine espresso,mustard, shallot, vinegar and lemon juice and blend in a food procesor while SLOWLY adding the olive oil and honey. Chill before use. Wash and spin dry (pat dry if you don't have a salad spinner) a mixture of your greens. Ladle a few spoonfuls of vinaigrette onto a salad plate then lay the greens on top. Cut strawberries into quartes and arrange amongst the leaves.
