Carrot and Orange Soup

Serves:6-8

"What? you say." You've never heard of putting carrots and oranges together! Well give it a try, you'll like it.

Ingredients:

1 lb fresh carrots
1 medium onion
1 oz butter (2 Tbsp)
3 1/2 Cupschicken stock
1 Tsp sugar
salt, to taste
4 large oranges, juiced and strained
2/3 Cup heavy cream
chopped chives

Method:

Slice carrots thinly and saute in the butter to soften. Do this over LOW heat so as to not brown the carrots. Stir in the stock and sugar then bring to a boil and simmer for one hour. Puree in a blender or food processor then season with salt. Add the orange juice and cream and heat through gently. Do NOT boil. Ladle into bowls and sprinkle with chopped chives.
