Corn Chowder

Serves:4

Ingredients:

8 rashers of Bacon
4 large Potatos - peeled and 1/2" diced
1 large Onion - finely diced
2 tbsp butter - shredded
1 Carrot - shredded
2 cans Creamed Corn
3/4 cup Heavy Cream
Chicken Stock

Method:

Cook bacon until crisp (microwave oven is perfect for this). Melt butter in a heavy bottomed saucepan and saute onions over medium low heat until they are golden. Cover potatos with just enough salted water to cover and boil until just tender. Chop bacon into small pieces. Once potatoes and onions are cooked place them in a large heavy bottomed saucepan along with the carrots and creamed corn. Mix well and add just enough hot chicken stock to cover (about 1 1/2 to 2 cups) thenadd heavy cream. Bring to a simmer but do not boil. If you added too much chicken stock and chowder is too thin you can add potato flakes or cornstarch to thicken (dissolve cornstarch in a little chicken stock before adding, if you do this be ceratin to simmer for 10 tonb20 minutes until starch cooks and the chowder thickens.
