Tomato Dill Soup
Serves:4
Ingredients:

5 large tomatoes (2 lbs) |
 |
3 Tbsp butter |
 |
1 medium onion, chopped |
 |
3/4 Tsp dried basil |
 |
1/2 Cup whipping cream |
 |
1 Tbsp brown sugar |
 |
3 Tbsp rum or brandy |
 |
chopped fresh dill |
 |
salt to taste |
Method:
Peel,seed and chop tomatoes. Melt butter and saute onions in it until golden brown. Add tomatoes and basil then simmer for 30 minutes. Heat cream with sugar over low heat then slowly add tomatoe mixture.Do Not Boil. Add liquour, seaon with salt and serve. Garnish with chopped dill.
