Garlic Smashed Potatoes

Serves:8

A classic twist to an old favourite. Enjoy!

Ingredients:

chili icon 4 Large Potatoes
chili icon 4 large cloves of roasted garlic
chili icon 3 Tbsp Butter
chili icon Heavy Cream
chili icon Salt and freshly ground Pepper to taste
chili icon 2 Tbsp finely chopped fresh Parsley

Method:

Peel and cut potatoes lengthwise then each half into quarters. Place in cold salted water and bring to a boil. When completely cooked remove from heat and drain then cover and let sit for 2-3 minutes. Mash potatoes in your usual manner adding the butter and garlic as you go along. When thoroughly combined add cream to smooth and fluff the potoatoes then seaon with salt and pepper. Sprinkle with parsley before serving. Makes four servings.
